With favourable growing conditions, Nigeria has become a significant producer and exporter of top-quality dried ginger slices worldwide. Cultivation mainly occurs in the southern and southwestern regions, where the tropical climate and well-drained soils create optimal growing conditions. Ginger thrives in warm, humid environments with partial shade and ample rainfall, often cultivated alongside cash crops. Planting usually begins at the onset of the rainy season, with rhizomes harvested after 8 to 10 months of growth. Once mature, rhizomes are carefully excavated, cleaned, and sliced into thin pieces using specialised equipment or traditional methods.
These ginger slices undergo drying, achieved through natural or mechanised means, until they reach the desired moisture content. Proper drying is essential to retain the slices’ flavour, aroma, and nutritional value.
